Dashi is named after the eponymous Japanese broth; a cornerstone in Japanese gastronomy used in soups, sauces, marinades, and much more. The umami-tasting broth is also prominent on the restaurant's seasonal menu, served osusume-style (ie. "the chef's daily recommendations"). Since May 2024, the restaurant has one star in the Guide Michelin.
