Inspired by pandemic boredom, experimental artist Carsten Höller thought to himself: "What if I apply architectural Brutalism to cooking? What would that be like?". The result is a restaurant unlike any other. The decoration is discretely askew to convey a surreal feeling. The menu itself is created in collaboration with award-winning chef Stefan Eriksson. Brutalism in cooking is not about lack of sophistication, but rather a commitment to purity and sparsity of ingredients. Elaborate cooking techniques may or may not be used, but decorating the plate is avoided.
